Cooking for Sunday




I don't know what it is about church that turns generally nice people ravenous, any other day you can have had breakfast at 9 am and be perfectly fine till 1 pm, but on Sunday it seems the belly growling starts early. So on Sundays after church you have two options .

1. Eat out, except everyone else and their grandmothers is also eating out. If we eat out after church its always at a buffet so we don't have to wait too long.
2. Cook something that can be left in a crockpot so that its ready when you come home. I do this with many things that I 've cooked the night before then just left on "keep warm" setting.

This meatloaf recipe is one of my favorites, now, if you think you don't like meatloaf then you have to try this one! I usually serve it with baked beans and potato chips because its fast, mashed potatoes are of course the best!



Presbyterian Meatloaf

2 pounds lean ground beef
2-3 eggs
1 1/2 cups bread crumbs (I like saltine crackers, unsalted unless you really like salt because onion soup mix is also salty.
3/4-1 cup tomato sauce
1/2 cup water
1 package dry onion soup mix (Lipton)
dash liquid smoke
bacon strips

Directions
Mix all ingredients up (reserving 1/4 c. tomato sauce for top)
and put in greased baking dish.
Bake for one hour at 350 degrees.
Place back strips along top of meat loaf.

(Honestly, I almost never use the bacon)

Yum! I found a recipe that uses those french fried crispy onion thingies. Oh is that delicious! However, this family of picky palates doesn't appreciate it as much as mom.

Around here, the cheap Chinese buffet is the big draw. Anybody who is "Anybody" goes to Ming Hing between 12 and 2 on Sunday afternoons. LOL. You can tell which churches let out when; "oh look, it's early service Kidron Menno. Here comes LIving Water. Here comes Pleasant View Menno. Oh there's CMA... and those charismatics from around the corner..." Ah, small town...
